How-to:

Boil potatoes

Chop cos lettuce

Add chunky pesto: chop dry-fried pine nuts & cashews, golden-fry finely chopped garlic, finely chopped basil, salt  & pepper, lemon juice, olive oil. Alternatively, put all ingredients in food processor. But the chopping is a preferred and highly-recommended exercise.

Splash of dressing: more lemon juice and olive oil
